Title: Evaluation Of In Vitro Anti-Oxidant Of Some Selected Yam Flour Fortified With Moringa Oleifera Seed Meal

Abstract

This study investigated the in vitro antioxidant properties of yam flours from Discorea rotundata, Discorea alata, Dioscorea cayenensis and Discorea bulbifera enriched with Moringa oleifera seed meal at 5 and 10% level of incorporation. Results of the in vitro anti oxidant properties showed that the 2, 2-diphenyl-1-picrylhydrazy (DPPH) content of the control sample ranged from 14.00 to 47.66% while  that  enriched with moringa oleifera seed meal ranged from 64.66 to 83.00%. The Hydroxyl (OH) radical scavenging for both control sample and the enriched samples ranged from 34.33-55.66 and 40.33-84.33 respectively. The study showed that enrichment of yam flour with moringa oleifera seed meal increased the anti oxidant properties of the enriched samples. The utilization and consumption of food products produced from these flour blends is a better alternative to synthetic drugs in oxidative implicated diseases such as diabetes.  Therefore, the enhancement of the nutritional value and the diversification of root and tuber crops with leguminous crops results to the reduction in post-harvest losses.

Biography

Kanu Ann Nkeiruka has a Ph.D., Msc, and first degree in Food Processing Technology, Food Micro biology and Biotechnology and Food Science and Technology.  She is a Principle Research Officer in one of the Research Institute in her Country. She has over 40 publications, published in both local and international journals.  She has mentored many Younger Researchers in her Institution, love imparting positively by educating them on statistical analysis, graph pad and Research writing. She believes in team work and has leadership qualities which has earned her the vice president of a Christian organization, public relation officer and Treasurer of her professional body in both branch and chapter level. Her profession has given her opportunity as a reviewer for the following; Nigeria Agriculture Journal, Science Domain International, Food Science and Technology. She has won International foundation of Science grant of 2014 and World Bank scholarship 2015 which saw her through her Ph.D.
